But familiarity does not always mean flexibility.
When supply tightens or prices move sharply, buyers need more options. In August 2026, U.S. longline Pacific cod prices were holding at record highs, while tighter Atlantic cod supply was also putting upward pressure on the market. [1]
The question, then, is not simply whether another species deserves a place on the menu.
It is whether that species can give buyers more sourcing flexibility without asking chefs or consumers to make a big change.

Easy for Diners to Say Yes To
Barramundi has a mild, clean and subtly sweet flavor with firm white flesh. It works across searing, grilling, baking and coating, leaving plenty of room for different seasonings, sauces and menu directions.
For foodservice, that means barramundi can move into dishes guests already understand: a crispy fish sandwich, tacos, a grain bowl or a seared entrée.
At retail, the same approachable flavor gives shoppers a different whitefish option without asking them to learn an entirely new way to prepare seafood.
The fish may be new to some customers. The eating experience does not have to be.
That matters commercially. Barramundi is already sold into U.S. foodservice in portion-controlled formats for applications ranging from dinner entrées and salads to tacos, with grilling, baking, sautéing and breading among the recommended preparations.

Between these two sit plenty of other options, from natural fillets to marinated portions. So the conversation does not have to begin with "What sizes do you sell?" A more useful question is:
