U.S. seafood shoppers continue to value quality, health benefits, and responsible sourcing, but they also expect clear value and convenient ways to prepare seafood.
For retailers and foodservice buyers, this means a successful seafood program must deliver more than a recognizable species. The product needs to look appealing, cook consistently, adapt to different formats, and come from a supply system that can support documented sourcing requirements.
Barramundi brings these qualities together in one versatile whitefish.
Farm-Raised Barramundi in Brackish Water
Barramundi is naturally adapted to brackish and marine environments. This is a hardy, fast-growing species that can be farmed across a broad range of salinities and harvested at different sizes depending on the intended market.
At VD Food, barramundi is raised in managed brackish-water pond systems supplied entirely from our own farming operations, covering approximately 150 hectares. Throughout the growing cycle, our farm teams continuously monitor water conditions, feed response, fish health and growth performance. Bi-weekly sampling and residue monitoring support harvest decisions, while surface feeding allows fish behaviour to be observed in real time, enabling earlier intervention whenever conditions change.
By managing the factors that influence the final product throughout the farming cycle, we deliver more consistent flesh quality, sizing and processing performance, giving buyers greater confidence in the raw material in every order.
Our farms are certified to BAP 4-Star, ASC and GlobalG.A.P. standards. Rather than treating certification as the destination, we see it as the outcome of disciplined farm management carried out every day.
Continuous monitoring, routine sampling and harvest planning help create a more predictable foundation for consistent raw material before processing begins. That supports more consistent portioning, processing performance and finished product specifications across retail and foodservice programs.

Versatility Meets Delicious Flavor
Barramundi has a mild, clean and subtly sweet flavor, with firm flesh that becomes moist and flaky after cooking. Its texture performs well across grilling, pan-searing, broiling and sous-vide applications, making it suitable for both retail-ready and foodservice menu concepts.
That versatility extends beyond cooking methods. Its mild flavor pairs naturally with fresh herbs and citrus in Mediterranean dishes, Mexican-inspired seasonings, or bold Asian marinades, giving chefs and product developers the flexibility to create products for different menus and consumer preferences. The firm texture also performs well through portioning, marination, coating, freezing and cooking, making barramundi a reliable species across a wide range of applications.
For VD Food, that versatility creates more possibilities for customers, allowing the same species to support different menu concepts, private-label programs and market preferences without compromising eating quality.

More Than a Farm-raised Barramundi Fillet
Barramundi is often introduced as a frozen fillet, which is commonly harvested at approximately 2 to 3 kilograms, making it well suited for value-added applications. We see it as a platform for product development. Its naturally broad fillets, firm texture and processing stability provide an excellent foundation for portioning, marination, coating and further processing.
As convenience continues to influence how Americans shop and prepare meals, retailers and foodservice operators are expanding beyond traditional frozen seafood to offer products that save time without compromising quality. That shift creates opportunities for formats such as marinated portions, breaded products and other ready-to-cook solutions that fit today's eating habits.
VD Food turns this opportunity into scalable production through a dedicated barramundi processing line and two value-added production lines, with an annual capacity of approximately 5,000 metric tons of barramundi raw material and 2,000 metric tons of value-added products. Rather than developing products for variety alone, we focus on creating formats that help our customers meet changing consumer needs across both retail and foodservice.
